Smoked Sausage, Chicken & Rice

You’ve been out shopping all day for Christmas presents, tied up in traffic, standing in long lines to check out at the stores and the family still wants dinner prepared when they get home.  Well, let me recommend this dish – quick, easy, and so full of flavor!

It doesn’t really have a name so you can call it whatever you like – I chose “Smoked Sausage, Chicken & Rice” because I needed a name for this post and that was as creative as I was going to get tonight – after all, I have been out Christmas shopping all day!  😉

  • 4 Cups Chicken Broth
  • 1 lb chicken
  • 1 pkg Smoked Sausage
  • 3 Cups Uncooked Rice
  • 2 TBLS Olive Oil
  • 1 1/2 teaspoons Sweet Paprika


Brown the chicken in the olive oil.  As soon as it is brown on both sides, add the chicken broth to the pan and bring to a boil to finish cooking the chicken.  Once the chicken is fully cooked, remove it from the broth.  Slice the smoked sausage into bite-sized pieces and toss into the broth to bring out the smokey flavors.  Bring broth back to a boil and add rice.  Cut chicken into chunks and add to broth and rice mixture.  Stir well  – salt and pepper to taste.  Add Paprika, stir well.  You are done and the family will be so pleased with dinner!  (I know that your rice calls for a 1-1 ratio of rice and water, but in this case you want a little extra moisture in the rice so that the dish isn’t dried out.  Trust me on this one.)

I paired this with a fabulous Baron DE Barbon from Rioja.  The smokey sausage just called for red wine and this fit the bill perfectly.
