Nacho Dip

You will find that most of my recipes are fairly simple.  I love good food, but just don’t have the inclination to spend a full day in the kitchen.  So here’s another simple dish that will please the whole family.  Enjoy!!!

  • 2 Pounds Hamburger
  • 1 Pound sausage
  • 2 10-oz can Ro-Tel (pick your own flavor)
  • 1 Can Cream of Chicken Soup
  • 1 Package Taco Seasoning MIx
  • 2 TBLS Cumin
  • 1 Medium Onion – diced
  • 3-4 Cloves Garlic – crushed
  • 1 Pound Velveeta (I prefer the Mexican, but you may not be able to find it) – cubed

Brown the hamburger and sausage in a pan – you can transfer the meat to a crock pot after it is browned if you choose.  Drain the grease.  Add the reamining ingredients and stir.  Let simmer until flavors have all blended and the cheese has melted, stirring occassionally.  Serve with tortilla chips and your beverage of choice.

I selected “Duet,” a Chardonnay and Vidal Blanc blend, a dry white from Hopkins Vineyard which turned out to be the perfect compliment to the spicy dip.  You might also try a semi-sweet wine with this dish.
