Chocolate Melting Cake

Chef’s Table – Carnival Cruise Lines

This recipe is compliments of Carnival Cruise Lines

We went on our first cruise over the New Year’s Holiday – a five-day cruise to the Bahamas.  The weather was a little nippy, but overall we had a great time.  One of our favorite experiences was the “Chef’s Table” where we had the opportunity to tour the galley and help make their most popular dessert, Chocolate Melting Cake.  After the dinner, they were gracious enough to share the recipe with everyone attending the dinner.  So now I am sharing it with you including my own Gluten Free version:

  • 6 oz. Dark Chocolate
  • 3/4 Cup Butter  (1 1/2 stick)
  • 4 Eggs (at room temperature)
  • 3/4 Cup Sugar
  • 1/4 Cup Flour  (for a Gluten free option, substitute with Corn Starch)

Melt the chocolate and butter together.  Mix the eggs and sugar in a separate bowl until the eggs are well blended, add the flour and continue mixing until all lumps are dissolved.  Combine the chocolate mixture and the egg mixture together blending well.  Pour into individual serving molds (ramekins work great).  Bake at 390˚ for 14 minutes.  Dust with powdered sugar (optional) and serve warm garnished with ice cream and fruit.

Yield: 4 servings
